Honey Lemon Soda - A Bright, Bubbly Refreshment

Ingredients
  

  • Fresh lemons (you’ll need juice and optional zest)
  • Honey (mild clover or wildflower works best)
  • Club soda or sparkling water (well-chilled)
  • Ice (cubes or crushed)
  • Pinch of fine salt (optional but recommended)
  • Fresh mint for garnish (optional)
  • Lemon slices or wheels for garnish (optional)

Method
 

  1. Chill your glass and soda: Pop your glass and the club soda in the fridge for at least 15 minutes. Cold ingredients keep the bubbles lively and the drink crisp.
  2. Juice the lemons: Roll a lemon on the counter to loosen the juice. Cut and squeeze until you have 2 tablespoons (1 ounce) of fresh lemon juice per serving. Strain out seeds and excess pulp if you prefer a smoother drink.
  3. Make a quick honey mix: In the bottom of your chilled glass, stir together 1 to 1.5 tablespoons honey with the lemon juice and a tiny pinch of salt. Stir until the honey fully dissolves. If your honey is thick, warm it briefly or add a teaspoon of warm water to help it blend.
  4. Add ice: Fill the glass with ice about three-quarters of the way. The ice chills the drink and softens the lemon’s bite.
  5. Top with bubbles: Slowly pour in 6 to 8 ounces of club soda. Pour down the side of the glass to keep fizz from foaming away.
  6. Gentle stir: Give the drink a brief, gentle stir from the bottom up so the honey-lemon base blends without knocking out the carbonation.
  7. Taste and adjust: If it’s too tart, add a splash more honey mix; if too sweet, add a squeeze of lemon or more soda.
  8. Garnish and serve: Add a lemon wheel and a sprig of mint. Serve immediately while it’s ice-cold and sparkling.
