Chill your glass and soda: Pop your glass and the club soda in the fridge for at least 15 minutes.
Cold ingredients keep the bubbles lively and the drink crisp.
Juice the lemons: Roll a lemon on the counter to loosen the juice. Cut and squeeze until you have 2 tablespoons (1 ounce) of fresh lemon juice per serving. Strain out seeds and excess pulp if you prefer a smoother drink.
Make a quick honey mix: In the bottom of your chilled glass, stir together 1 to 1.5 tablespoons honey with the lemon juice and a tiny pinch of salt.
Stir until the honey fully dissolves. If your honey is thick, warm it briefly or add a teaspoon of warm water to help it blend.
Add ice: Fill the glass with ice about three-quarters of the way. The ice chills the drink and softens the lemon’s bite.
Top with bubbles: Slowly pour in 6 to 8 ounces of club soda.
Pour down the side of the glass to keep fizz from foaming away.
Gentle stir: Give the drink a brief, gentle stir from the bottom up so the honey-lemon base blends without knocking out the carbonation.
Taste and adjust: If it’s too tart, add a splash more honey mix; if too sweet, add a squeeze of lemon or more soda.
Garnish and serve: Add a lemon wheel and a sprig of mint. Serve immediately while it’s ice-cold and sparkling.
